If you only like crisp cookies, this is not the post for you. So sorry! Try these instead.
These soft cookies are for days when being “good” is just bringing all the gremlins to the fore. ” Cookies, I WANT cookies! ” is repeating and repeating and repeating in your mind. The recipe only makes six, not so small cookies. There is no all purpose flour, no added refined sugar. They can be mixed up and back out of the oven in about 12 minutes.
Tweaking is allowed to match your priorities. The chopped dates can be exchanged for raisins, dried cranberries, apricots, prunes, figs or a mixture of dried fruits, even trail mix or chocolate chips if they fit the goals. The cinnamon can be replaced with 5-spice, cardamon, pumpkin spice blend or something similar. Flax seed liquid or aquafaba can replace the egg if you are feeling so inclined. Honey or a sugar substitute can be used instead of maple syrup.
You will need:
1/4 cup flax meal
1/2 cup almond flour
1 tsp. cinnamon
1 tsp. baking powder
two pinches of salt
1 egg
2 Tbsp. coconut oil, melted
2 Tbsp. maple syrup
4 chopped dates
Gather your ingredients and acknowledge that you have choices and are making good ones. Much better than going through a row of Oreos. Take a deep breath, thinking of the beneficial things you will be giving your body or sharing with others. All things in moderation. Release your breath, letting go of the added stresses you carry. Come into the present moment, welcome the compassionate spirits and begin.
Preheat oven to 350 degrees F.
Combine the first five ingredients and the chopped dates in a medium bowl. Stir to combine the dry ingredients.
Combine the liquid ingredients ( egg, oil and maple syrup ) in a small bowl (I used measuring cups). Pour the liquid ingredients into the dry ones and stir just to combine.
On a parchment covered cookie sheet, spoon the batter into six equal circles.
Bake 6 minutes and check to see how they are doing. You might need one or two minutes more. A little deeper colour on the bottom is fine.
Remove from the oven and allow to cool 2-3 minutes before transferring to a cooling rack.
A filling treat you can enjoy without feeling like the rest of the entire day’s efforts were for naught. ( They also work well in bag lunches for work and school ).
